Bolo De Cenoura - Brazilian Carrot Cake

Brazilian carrot cake aka Bolo de Cenoura, calls for easy breezy preparation. This cake is one of the most popular and traditional Brazilian dessert. You might have already tried varieties of carrot cake but trust me this Brazilian carrot cake is completely different from those usual carrot cakes. Its quite a unique dessert with an incredible topping and looks almost like cornbread. The addition of chocolate sauce gives a fabulous touch to this flavourful carrot cake. You may wonder why am talking about this beautiful cake. Kovai Hotel Angannan Naatu Kozhi Biriyani/Coimbatore Hotel Anganan Special Chicken Biryani

Sunday lunch is always special that too when we make a biriyani which is quite popular in Tamil Nadu. Actually i never had a chance to taste Coimbatore Hotel Angannan's special Biriyani but trust me google master will definitely help to replicate many traditional dishes at home just with a click. I have been looking for a different biriyani recipe since a while as i was bored to cook the same routine style of biriyani. When i was googling i got hooked to a cookery show where the chef prepared this Kovai special Hotel Anganan chicken biriyani with simple ingredients. Obviously i couldnt resist to give a try and this biriyani came out simply flavourful.

Cheese & Herbed Sundried Tomato Focaccia

Focaccia, this flat Italian bread is definitely our family favourite since ever i tried at home. You can make fantastic sandwiches with this focaccia bread though this bread can be served as an accompaniment along with a bowl of soup or salads. I brought some Sicilian sun dried tomatoes all the way from Sicily after our summer vacation, as i have seen that Sicilian cant live without this fantastic sundried beauties. Back home i was waiting to make an easy bread with it, immediately i gathered all the ingredients to bake this fantastic Italian focaccia with those flavourful sun dried tomatoes. Trust me, this focaccia bread was our moist favourite, this bread came out extremely aromatic and absolutely spongy with loads of cheese and herbs.

Eggless Cloverleaf Brioche Rolls with Chocolate Chips

If you would have went through my previous post, you might have noticed that am running this week's blogging marathon with an interesting theme. 'Pick an appliance and Make 3' is this week's theme and i picked Oven as the star appliance from the huge list of appliances which have their important place in my kitchen. Oven, its my favourite kitchen gadget and cant live without this. Obviously its wonderful to bake some fabulous baked goodies out of this beautiful gadget. After an Italian focaccia bread, am posting an eggless cloverleaf brioche rolls with chocolate chips. Yes you read it, this brioche is completely eggless but not butter free. I cant imagine brioche without butter, trust me you wont miss the eggs in this brioche rolls.

Pain d'Epi/French Wheat Stalk Bread with Caramelized Onions

Pain d'épi is known as the wheat stalk bread which calls for an impressive twist on the classic French baguette. We get these Pain d'épi very much easily in every bakeries here, obviously i never had a chance to bake these wheat stalk shaped bread at home. But finally it happened, and i baked Pain d'épi at home.Epi de Blé is the name given to the bread which looks like wheat stalk or the ears of wheat. This bread is often baked during special holidays and celebrations, this bread calls for an easy preparation and sounds almost like French baguette. Apart from cutting the dough to resemble as much as like wheat stalk, this bread calls for easy ingredients.

Aloo Paneer Kebab/Potato Paneer Kebab

Potato and paneer in kebabs, cant ask more rite. Both these two ingredients are our family favourite and they have their important place in our weekly menu. Though i dont like to get paneer from stores, Indian stores are loaded with this Indian cheese. Store bought cheeses are really handy when we dont have enough time to prepare paneer cheese at home. Last week, when we went to Indian store, i couldnt resist to pick a packet of paneer. After preparing a paneer curry, there were some leftover paneer cubes sitting in my fridge. Since i want to give a second life, i went on preparing this ultimate aloo paneer kebabs.

Kalmi Kabab/Chicken Kalmi Kebab

Kalmi Kebab, calls always for chicken drumsticks, though chicken thighs makes excellent, juicy, succelent, tender kebabs. Kebab lovers will definitely fell in love this meaty kebab, this kebab is a must if you want to give a try kebabs at home. Homemade kalmi kebabs calls for mild spices and the marination plays an important role to get juicy kalmi kebabs. Tandoori ovens are usually used for making kebabs, however baking in oven works awesome to dish out this succelent chicken thighs. Drumstick Pulp Kebab/Murungakaai Kabab

Kebabs are usually prepared with grounded meats though vegetables are used often in our Indian style of kebabs. Kebabs makes a fabulous starter as well as excellent evening snacks when served along with varieties of sauces. I picked Kabab varieties as theme for this week's blogging marathon, obviously for the first day of this week's blogging marathon, i couldnt resist to dish out some kebabs with drumstick pulps. Drumstick pulps in kebab may sounds bizarre but trust me, this pulps makes an interesting kebabs. Very easy to make, this kebab are seriously very healthy as drumstick pulps are rich in iron.

Eggless Orange Curd & Chocolate Mousse Tart

Just forgive me for posting again a chocolate mousse dessert, i couldnt stop myself as this chocolate mousse tart topped with eggless orange curd was our recent favourite. Yes this layered orange curd and chocolate mousse tart makes an excellent dessert as well if you are looking for something different for your dessert after meal. Orange curd and chocolate mousse, both makes excellent dessert when served separately. But these two ingredients makes an excellent dessert as well. We doesnt need any reason to prepare this utlimate tart eventhough the cooking and baking process asks for bit time consuming. You can bake the tart base earlier a day and then fill it with eggless chocolate mousse and orange curd the next day.

When you are planning to make something with chocolate, we doesnt need any excuse to dish out some eggless chocolate mousse with less efforts rite. If peoples at home asks me to make a dessert to indulge after a meal, my mind will always go for some chocolate based desserts. Though chocolate desserts are our family favourite, we will look for a chance to dish out desserts with chocolate. Actually chocolate mousse is my most favourite, i seriously looking for a chance to make a layered dessert with chocolate mousse since a while. Finally it happened, hence i created this lipsmacking eggless chocolate mousse with muesli and apricots.

Watermelon & Mascarpone Parfait

Layered desserts are always my favourite, obviously if am planning to make some special desserts for special occasions, i wont hesitate a second to make layered desserts just to please everyone's tastebuds. Its peak season of watermelon here, i seriously want to give a try to a simple and refreshing layered dessert with this summer fruit since a while. Before we left to summer vacation, we had a small get together with our close friends, obviously i prepared this watermelon and mascarpone parfait to serve as a dessert after our meal. Trust me, this refreshing parfait makes an elegant dessert after a heavy or a special meal. Very easy to make, we simply loved this refreshing dessert and got many appreciation from my friends for this catchy dessert.

Eggless Crispy Almond Cookies With Chocolate Chips/Thin Almond Cookies

Crispy Almond Cookies, trust me these scrumptious cookies are dangerously addictive. Usually i love to indulge chewy cookies, while googling few days back i accidently saw these crispy cookies.Though i was bit intrigued by these crispies, i gathered all the ingredients to give a try to these nutty cookies. Almost like butter cookies, these crispy almond cookies calls for butter, obviously this cookies are loaded with butter and chocolate chips. This cookie dough gets ready very much quickly though this dough sits for half an hour in freezer or for an hour in fridge. However apart from this, these cookies gets completely baked within 15 minutes.

Vegan Saffron Cashew Pilaf

Pilaf is a rice dish which is prepared or cooked in a seasoned broth. Though this rice ressembles as much as like Indian pulaos or briyanis, pilaf calls for easy breezy preparation. Depending upon the local cuisine, meat, vegetables, nuts, pasta or else dry fruits are added to the pilaf. Pilaf is a staple food and a national dish in most countries. Pilaf makes an excellent lunch or else a Royal feast when served along with rich side dishes or else with grilled meats. Eggless Chocolate Walnut Rolls

I have been baking often now as am in summer vacation. After an exciting trip to Sicily we came back home with full enthu. Everyone at home just missed my homemade breads and hence i kick started baking by baking out this alluring eggless, chocolate walnut rolls which tastes more delicious than the usual cinnamon rolls. Since none at home want cinnamon rolls for their snacks, i simply went with a chocolate based walnut rolls. This rolls are completely eggless and not vegan. Yes butter and milk plays an important role for preparing this bread dough. Am running this month's blogging marathon with Go nuts as this week's theme. Obviously i will be posting three different nuts based dishes for this week's theme.
